Gastronomy: The Confluence of All Knowledge

We eat out of necessity, but we cook out of culture. Few human activities encompass as much complexity, as much history, as much science, and as much beauty as the act of preparing and sharing food. From humble stoves to avant-garde kitchens, gastronomy is simultaneously science, art, language, identity, economics, philosophy, history, religion, and much more…

In this era that pushes us toward extreme specialization, gastronomy reveals itself as a total, integrative knowledge. The physics of heat, the chemistry of reactions, the mathematics of proportions, and the biology of what nourishes us all coexist in a single dish. But centuries of history, economic decisions, social structures, artistic expressions, and ethical and even religious dilemmas are also manifest. Eating, in short, is thinking about the world with a capital letter.

This inaugural address at this Royal Academy of Doctors is a journey through the many faces of gastronomy. A journey through the territories of knowledge where food is not only matter, but metaphor. Where cooking is also about telling, connecting, and transforming. And where academic knowledge can and should engage with everyday life through a language as universal as the language of taste.

I invite you to this journey from the conviction that gastronomy is not a minor or peripheral field of knowledge, as some might think, but a melting pot where all the sciences, which this Royal Academy brings together to a large extent in the many Doctors who comprise it, find their reflection. Because when one sits at the table, one also sits facing history, economics, science, even the so-called exact sciences, and ultimately oneself.
