El ejemplo de la dieta mediterr\u00e1nea&#8221;<\/strong>, en el qual resumeixen els seus treballs sobre una mat\u00e8ria en la qual s\u00f3n reconeguts experts.<\/p>\n<p>&#8220;Actualment, l&#8217;alimentaci\u00f3 saludable no \u00e9s nom\u00e9s la que evita caure en la malnutrici\u00f3, \u00e9s a dir, aquella que ens aporta tots els nutrients, a trav\u00e9s dels aliments i begudes, que necessita el nostre organisme per viure, sin\u00f3 la que permet de gaudir de la millor salut possible, evitar les malalties cr\u00f2niques no transmissibles i envellir lliure de discapacitat. Per aix\u00f2, hem de seguir una alimentaci\u00f3 rica en fruites i verdures, llegums, cereals, peix blau, fruits secs, oli d&#8217;oliva, moderada en lactis fermentats, carn blanca, ous, i baixa en carn vermella, sucres, sal i greixos saturats. Aix\u00f2 es correspon amb la dieta mediterr\u00e0nia, que va ser inscrita el 2010 en la <strong>Llista Representativa del Patrimoni Cultural Immaterial de la Humanitat<\/strong> per la <strong>Unesco<\/strong> i \u00e9s una de les dietes m\u00e9s estudiades en la investigaci\u00f3 cient\u00edfica i ha demostrat els seus efectes beneficiosos per a la salut i la prevenci\u00f3 de malalties cr\u00f2niques no transmissibles&#8221;, resumeixen els autors el seu estudi.<\/p>\n<p>Per a Urrialde i Gonz\u00e1lez-Gross, aquesta dieta saludable va molt m\u00e9s enll\u00e0 d&#8217;una llista d&#8217;aliments i de les seves principals elaboracions per convertir-se en una s\u00e8rie d&#8217;actituds i valors comportamentals com la pr\u00e0ctica d&#8217;activitat f\u00edsica, el descans curt ocasional que suposa el costum de la migdiada, els menjars socials i en calma i un ampli patrimoni gastron\u00f2mic. D&#8217;altra banda, els experts advoquen perqu\u00e8 aquest model d&#8217;alimentaci\u00f3 sostenible sigui promogut per les institucions p\u00fabliques i privades i objecte d&#8217;investigaci\u00f3, coneixement i respecte a la cadena cont\u00ednua de producci\u00f3, processament, promoci\u00f3, venda i consum d&#8217;aliments donat el retroc\u00e9s del qual \u00e9s objecte.<\/p>\n<p>&#8220;Malgrat aquests beneficis comprovats, les dades de les investigacions realitzades als pa\u00efsos mediterranis indiquen un progressiu allunyament de la dieta mediterr\u00e0nia al llarg de les \u00faltimes d\u00e8cades. Aix\u00f2 \u00e9s una preocupaci\u00f3 compartida entre investigadors, cl\u00ednics i administracions p\u00fabliques, i hem d&#8217;unir els nostres esfor\u00e7os en fer-la m\u00e9s atractiva per a les generacions actuals i futures, amb un enfocament d&#8217;una sola salut pel que fa a l&#8217;alimentaci\u00f3&#8221;, assenyalen els dos acad\u00e8mics, que alerten de l&#8217;auge del menjar r\u00e0pid i advoquen per la reducci\u00f3 de sal i sucre, aix\u00ed com de la ingesta de greixos saturats. &#8220;Una alimentaci\u00f3 saludable ha de tenir en compte aspectes innovadors com la sostenibilitat. Els estudis demostren que la dieta mediterr\u00e0nia \u00e9s una dieta sostenible. Que es vagi deixant de seguir ha de ser una preocupaci\u00f3 compartida entre investigadors, cl\u00ednics i administracions p\u00fabliques, i hem d&#8217;unir els nostres esfor\u00e7os en fer-la m\u00e9s atractiva&#8221;, conclouen.<\/p>\n<p>Reconegut expert en la regulaci\u00f3 aliment\u00e0ria, Urrialde \u00e9s autor i coautor de publicacions cient\u00edfiques relacionades amb l&#8217;educaci\u00f3 nutricional. Va ser cap de Salut i Seguretat Aliment\u00e0ria a<strong> Puleva Food<\/strong>, director de l&#8217;\u00c0rea de Sanitat i Alimentaci\u00f3 en la <strong>Uni\u00f3 de Consumidors d&#8217;Espanya<\/strong>, coordinador t\u00e8cnic de la revista <strong>&#8220;Ciudadano&#8221;<\/strong>, director de Salut i Nutrici\u00f3 de <strong>Coca-Cola Iberia<\/strong>, t\u00e8cnic d&#8217;an\u00e0lisi de l&#8217;<strong>Institut del Fred<\/strong> del <strong>Consell Superior d&#8217;Investigacions Cient\u00edfiques<\/strong> i col\u00b7laborador de la <strong>C\u00e0tedra de Fisiologia Vegetal<\/strong> de la Facultat de Ci\u00e8ncies Biol\u00f2giques de la Universitat Complutense de Madrid. Per la seva part, Gonz\u00e1lez-Gross \u00e9s membre de les juntes directives de la <strong>Federaci\u00f3 de Societats de Nutrici\u00f3 d&#8217;Europa<\/strong> i de la<strong> Iniciativa Europea &#8220;L&#8217;Exercici \u00e9s Medecina&#8221;<\/strong>, membre de la <strong>Uni\u00f3 Internacional de Ci\u00e8ncies de la Nutrici\u00f3<\/strong>, s\u00f2cia fundadora de la xarxa cient\u00edfica <strong>Exernet<\/strong> i membre de <strong>Xarxa C\u00edber d&#8217;Obesitat i Nutrici\u00f3<\/strong>. Ha participat aix\u00ed mateix en m\u00e9s de 70 projectes d&#8217;investigaci\u00f3 i donat m\u00e9s de 250 confer\u00e8ncies en l&#8217;\u00e0mbit nacional i internacional.
