Organitzada per la <strong>Reial Acad\u00e8mia de Gastronomia d&#8217;Espanya<\/strong> i l&#8217;<strong>Institut Universitari CEU Alimentaci\u00f3 i Societat<\/strong> amb el suport de l&#8217;<strong>Acad\u00e8mia Internacional de Gastronomia<\/strong>, la cita va comptar amb mig centenar de ponents internacionals de primer nivell entre els quals van destacar reconeguts experts, xefs amb estrella Michelin i acad\u00e8mics d&#8217;institucions de prestigi com ara la <strong>Universitat d&#8217;Oxford<\/strong>, la <strong>Universitat de H\u00e8lsinki<\/strong> i la <strong>Universitat d&#8217;Estocolm<\/strong>, o el<strong> Basque Culinary Center<\/strong>.<\/p>\n<p>Entre els participants es trobaven els tamb\u00e9 membres de la RAED <a href=\"https:\/\/raed.academy\/ca\/academics\/dr-javier-aranceta-bartrina\/\" target=\"_blank\" rel=\"noopener\"><em><strong>Javier Aranceta<\/strong><\/em><\/a>, president del <strong>Comit\u00e8 Cient\u00edfic<\/strong> de la <strong>Societat Espanyola de Nutrici\u00f3 Comunit\u00e0ria<\/strong> i de la <strong>Reial Acad\u00e8mia de Medicina del Pa\u00eds Basc<\/strong> i acad\u00e8mic numerari de la Reial Acad\u00e8mia de Gastronomia i de la RAED, i <strong>Carmen P\u00e9rez Rodrigo<\/strong>, professora del Departament de Fisiologia de la Facultat de Medicina i Infermeria de la <strong>Universitat del Pa\u00eds Basc<\/strong>, acad\u00e8mica de la Reial Acad\u00e8mia de Medicina del Pa\u00eds Basc, expresidenta de la Societat Espanyola de Nutrici\u00f3 Comunit\u00e0ria i exvicepresidenta de l&#8217;<strong>Acad\u00e8mia Europea de Ci\u00e8ncies de la Nutrici\u00f3<\/strong> i acad\u00e8mica electa de RAED.<\/p>\n<p>Varela ha liderat al llarg dels \u00faltims anys la celebraci\u00f3 del <strong>Dia Nacional de la Nutrici\u00f3<\/strong>, l&#8217;acte central del qual se celebra a la seu del <strong>Ministeri d&#8217;Agricultura, Pesca i Alimentaci\u00f3<\/strong>. Aix\u00ed mateix, \u00e9s autor de l&#8217;informe <strong>&#8220;Alimentaci\u00f3n en la sociedad del siglo XXI pospandemia: decisi\u00f3n alimentaria (2022)&#8221;<\/strong>, editat per la <strong>Fundaci\u00f3 Mapfre i<\/strong> l&#8217;<strong>Institut Universitari &#8220;Alimentaci\u00f3 i Societat&#8221;<\/strong> de la Universitat CEU-San Pablo.<\/p>\n<h2>Declaraci\u00f3 de Madrid<\/h2>\n<p>En la present &#8220;Declaraci\u00f3\u00a0de Madrid&#8221;, amb motiu de la celebraci\u00f3 de la\u00a0Confer\u00e8ncia\u00a0Internacional de\u00a0Gastronomia\u00a02025, sota el lema <em><strong>&#8220;Reframing Gastronomy&#8221;<\/strong><\/em>:<\/p>\n<ol>\n<li>S&#8217;insta a les diferents administracions dels estats, dins del marc de les seves respectives compet\u00e8ncies, a incorporar al sistema educatiu de manera definitiva els coneixements d\u2019alimentaci\u00f3, nutrici\u00f3, gastronomia, l&#8217;educaci\u00f3 del gust, les experi\u00e8ncies sensorials en el seu conjunt, i sempre d&#8217;acord amb l&#8217;evid\u00e8ncia cient\u00edfica provada del model de Dieta Mediterr\u00e0nia, aix\u00ed com d&#8217;altres dietes territorials i tradicionals. I en la mesura possible, de manera creixent mitjan\u00e7ant l&#8217;\u00fas de les noves tecnologies, incloent-hi la intel\u00b7lig\u00e8ncia artificial, a potenciar l&#8217;ensenyament i divulgaci\u00f3 en aquest \u00e0mbit.<\/li>\n<li>La Declaraci\u00f3 requereix iniciatives que puguin desenvolupar-se a molt diferents nivells, per promocionar i preservar tots els territoris, paisatges i productes que conformen els patrimonis gastron\u00f2mics locals. Es reconeix que la gastronomia s&#8217;est\u00e0 convertint en un dels principals reclams en mat\u00e8ria de turisme i com a motor econ\u00f2mic, i que la interacci\u00f3 turisme\/gastronomia\/nutrici\u00f3 est\u00e0 tenint un efecte molt positiu tamb\u00e9 en el denominat &#8220;turisme de salut&#8221;. Tot aix\u00f2, sense deixar de recon\u00e8ixer el molt rellevant paper que la gastronomia exerceix en la cultura, les arts, i les diferents expressions religioses.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-134044 size-full\" src=\"https:\/\/raed.academy\/wp-content\/uploads\/2023\/06\/Nutricion-Gastronomia-Alianza-de-Exito-Licencia-Pixabay-DST.webp\" sizes=\"(max-width: 600px) 100vw, 600px\" srcset=\"https:\/\/raed.academy\/wp-content\/uploads\/2023\/06\/Nutricion-Gastronomia-Alianza-de-Exito-Licencia-Pixabay-DST.webp 600w, https:\/\/raed.academy\/wp-content\/uploads\/2023\/06\/Nutricion-Gastronomia-Alianza-de-Exito-Licencia-Pixabay-DST-440x264.webp 440w\" alt=\"\" width=\"600\" height=\"359\" \/>S&#8217;insta a preservar i recon\u00e8ixer els llegats gastron\u00f2mics com a estrat\u00e8gia per lluitar contra l&#8217;homogene\u00eftzaci\u00f3 i globalitzaci\u00f3; alhora, se sol\u00b7licita la protecci\u00f3 del patrimoni arquitect\u00f2nic dels mercats tradicionals i\/o establiments singulars de productes alimentaris, els cellers o altres infraestructures relacionades i tamb\u00e9 dels estris i maquin\u00e0ries relacionats amb l&#8217;alimentaci\u00f3 i la gastronomia en els nostres entorns.<\/li>\n<li>La present Declaraci\u00f3 reconeix i s&#8217;enorgulleix del paper fonamental que exerceixen els nostres experts i talentosos xefs en la conservaci\u00f3 i l&#8217;exportaci\u00f3 del patrimoni gastron\u00f2mic, aix\u00ed com la import\u00e0ncia de preservar l\u2019excel\u00b7l\u00e8ncia en la compet\u00e8ncia culin\u00e0ria. Per aix\u00f2, se sol\u00b7licita que s&#8217;implementin programes de formaci\u00f3 espec\u00edfics per als professionals de la gastronomia. Igualment, demana que aquesta formaci\u00f3 inclogui, igualment de manera priorit\u00e0ria, els aspectes relacionats amb la nutrici\u00f3 i la sostenibilitat.<\/li>\n<li>Se sol\u00b7licita l&#8217;estudi i la protecci\u00f3, en tot el possible, dels aspectes socials de l&#8217;alimentaci\u00f3, posant un especial \u00e8mfasi en com la convivialitat demostrada en models com el de la Dieta Mediterr\u00e0nia, constitueix un factor de protecci\u00f3 per a la salut, el benestar i la qualitat de vida.<\/li>\n<li>Considera imprescindible i urgent fomentar i invertir en recerca en gastronomia, alimentaci\u00f3 i nutrici\u00f3, tant b\u00e0sica com aplicada, com a garantia per establir pol\u00edtiques aliment\u00e0ries i nutricionals adequades per als ciutadans, i allunyi de les informacions i opinions que generen confusi\u00f3 i mala praxi entre professionals i poblaci\u00f3 en general. Aix\u00ed, s&#8217;analitza l&#8217;estat de la investigaci\u00f3 en l&#8217;\u00e0mbit de la denominada gastronomia cient\u00edfica, concloent-se que el desenvolupament \u00e9s encara molt feble, atomitzat, sense xarxes que permetin avan\u00e7ar, i busqui sinergies entre els \u00e0mbits acad\u00e8mics i cient\u00edfics, per\u00f2 tamb\u00e9 amb els nostres xefs i experts en gastronomia. Igualment, s&#8217;observa una falta de convocat\u00f2ries de projectes trasnacionales dins de l&#8217;\u00e0mbit d&#8217;aquesta Confer\u00e8ncia, o d&#8217;estrat\u00e8gies planificades, urgint la seva posada en marxa.<\/li>\n<li>L&#8217;alimentaci\u00f3 i els estils de vida han esdevingut una causa fonamental de factors de risc, malalties i de patologies, com ara l&#8217;obesitat, les malalties cardiovasculars i la diabetis, que generen no nom\u00e9s un empitjorament en la salut dels ciutadans i la seva qualitat de vida, sin\u00f3 que tamb\u00e9 generen un elevat cost econ\u00f2mic en l&#8217;atenci\u00f3 sanit\u00e0ria. Per aix\u00f2, la present Declaraci\u00f3 ressalta la import\u00e0ncia d&#8217;aplicar les recomanacions de l&#8217;<strong>Organitzaci\u00f3 Mundial de la Salut<\/strong> per lluitar contra l&#8217;obesitat i la mala alimentaci\u00f3 i, en paral\u00b7lel, procurar la capacitaci\u00f3 en habilitats culin\u00e0ries i l&#8217;educaci\u00f3 dels sentits, des de les edats m\u00e9s primerenques.<\/li>\n<li>Es reivindica la import\u00e0ncia que ha d&#8217;adquirir la gastronomia en els diferents \u00e0mbits de la restauraci\u00f3 col\u00b7lectiva: des dels menjadors escolars a les resid\u00e8ncies geri\u00e0triques, incloent-hi l&#8217;entorn laboral i l&#8217;hospitalari. Tot aix\u00f2, considerant sempre que sigui possible, les prefer\u00e8ncies i aversions, el perfil gen\u00e8tic, les capacitats sensorials, l&#8217;estat de salut, etc&#8230; Aix\u00ed, cal avan\u00e7ar en la denominada gastronomia de precisi\u00f3, per a la qual eines com el Big Data i la intel\u00b7lig\u00e8ncia artificial es presenten com a recursos fonamentals.<\/li>\n<li>En una gastronomia cada vegada m\u00e9s diversificada i globalitzada, i amb noves formes d&#8217;expressi\u00f3 m\u00e9s enll\u00e0 de les tradicionals, com el &#8220;take-away&#8221; o el &#8220;delivery&#8221;, la seguretat aliment\u00e0ria (formaci\u00f3, legislaci\u00f3 i monitoratge) aplicada al nou \u00e0mbit gastron\u00f2mic ha de tenir un paper molt rellevant.<\/li>\n<li>La gastronomia actual no pot ni ha de ser aliena al creixent problema de la vulnerabilitat social i inseguretat aliment\u00e0ria. Per aix\u00f2, \u00e9s fonamental desenvolupar estrat\u00e8gies que permetin en aquestes poblacions una decisi\u00f3 aliment\u00e0ria correcta i satisfact\u00f2ria. Aix\u00ed, la denominada gastronomia solid\u00e0ria i els seus valors s&#8217;ha d&#8217;estimular a tota la cadena aliment\u00e0ria<\/li>\n<\/ol>\n<p>La present Declaraci\u00f3 s&#8217;ha de considerar, en definitiva, com un comprom\u00eds ferm de la societat al seu conjunt per preservar i revitalitzar el llegat de la gastronomia en el seu sentit m\u00e9s ampli. Alhora, insta a la recerca i la innovaci\u00f3 com mitjans fonamentals per aconseguir una millor qualitat de vida, una societat m\u00e9s plena i equitativa i un envelliment saludable, a la
