{"id":113245,"date":"2022-02-18T09:21:20","date_gmt":"2022-02-18T09:21:20","guid":{"rendered":"https:\/\/raed.academy\/?p=113245"},"modified":"2022-02-21T08:46:04","modified_gmt":"2022-02-21T08:46:04","slug":"la-paleonutricio-i-lorigen-de-la-dieta-mediterrania-i-2","status":"publish","type":"post","link":"https:\/\/raed.academy\/ca\/la-paleonutricio-i-lorigen-de-la-dieta-mediterrania-i-2\/","title":{"rendered":"La paleonutrici\u00f3 i l&#8217;origen de la dieta mediterr\u00e0nia (i 2)"},"content":{"rendered":"<p><a href=\"https:\/\/raed.academy\/ca\/academics\/dr-august-corominas-vilardell\/\" target=\"_blank\" rel=\"noopener\"><strong><em>August Corominas<\/em><\/strong><\/a><br \/>\n<em>Professor de la Universitat de M\u00farcia i de la Universitat Aut\u00f2noma de Barcelona i acad\u00e8mic em\u00e8rit i membre del Senat de la Reial Acad\u00e8mia Europea de Doctors-Barcelona 1914 (RAED)<\/em><\/p>\n<p><a href=\"https:\/\/raed.academy\/ca\/academics\/dr-august-corominas-vilardell\/\" target=\"_blank\" rel=\"noopener\"><strong><em>August Corominas<\/em><\/strong><\/a>, professor de Fisiologia Humana de la <strong>Universitat de M\u00farcia<\/strong> i de la <strong>Universitat Aut\u00f2noma de Barcelona<\/strong> i acad\u00e8mic em\u00e8rit i membre del <strong>Senat<\/strong> de la <strong>Reial Acad\u00e8mia Europea de Doctors-Barcelona 1914<\/strong> (RAED), comparteix amb la comunitat acad\u00e8mica l&#8217;article <strong>&#8220;Paleonutrici\u00f3, origen de la dieta mediterr\u00e0nia?&#8221;<\/strong>, un article que oferim en dues parts atesa la seva extensi\u00f3 i que se suma a les seves reflexions recents sobre els efectes del clima en la salut publicades tamb\u00e9 al web de la RAED.<\/p>\n<h3>Malalties de la civilitzaci\u00f3<\/h3>\n<p>Establir\u00a0\u00a0l&#8217;origen de la dieta mediterr\u00e0nia t\u00e9 inter\u00e8s hist\u00f2ric, antropol\u00f2gic, cultural, evolutiu, nutricional i m\u00e8dic.<\/p>\n<p>La primera fase de la formaci\u00f3 cultural humana va tenir lloc exclusivament a \u00c0frica. \u00c9s a partir d&#8217;1,5 milions d&#8217;anys quan els nostres avantpassats van deixar aquell \u00e0mbit geogr\u00e0fic, estenent-se per Europa, on introdueixen la t\u00e8cnica de tallar la pedra sobre un c\u00f2dol. Les estacions m\u00e9s antigues de la cultura del c\u00f2dol s\u00f3n: Petralona a Gr\u00e8cia, Monte Peglis a It\u00e0lia, Vallonet a Fran\u00e7a i Aculadero a Espanya. Podrien considerar-se aquestes quatre estacions prehist\u00f2riques com els llocs on s&#8217;inicia la m\u00e9s primitiva alimentaci\u00f3, la Paleodieta prefoc (Paleodieta crud\u00edvora o crudidieta).<\/p>\n<p>D&#8217;acord amb la nostra mentalitat, ens \u00e9s dif\u00edcil comprendre com ha pogut subsistir l&#8217;esp\u00e8cie humana, a trav\u00e9s de centenars de mil\u00b7lennis, pel que fa a l&#8217;alimentaci\u00f3, ja que no tenia al seu abast productes agr\u00edcoles ni animals dom\u00e8stics ni disposava d&#8217;instruments de ca\u00e7a, ni tenia foc per cuinar. \u00c9s a dir, que la seva dieta es redu\u00efa a la recol\u00b7lecci\u00f3 de productes naturals, que havia de consumir crus.<\/p>\n<p>Abans del coneixement i la pr\u00e0ctica de l&#8217;agricultura l&#8217;home devia passar grans problemes per sobreviure, ja que nom\u00e9s disposava dels aliments que la natura, espont\u00e0niament, li oferia. La dificultat de la subsist\u00e8ncia seria dram\u00e0tic. No obstant aix\u00f2, va viure centenars de milers d&#8217;anys en aquelles condicions prec\u00e0ries i l&#8217;esp\u00e8cie humana va perdurar i evolucionar. Darwin afirma que l&#8217;home primitiu es va veure for\u00e7at a alimentar-se amb tot all\u00f2 que era capa\u00e7 de mastegar i empassar. Per\u00f2 l&#8217;omn\u00edvor hum\u00e0 sempre estava sotm\u00e8s a un dilema: descobrir un nou tipus o classe d&#8217;aliment o patir una ingesti\u00f3 t\u00f2xica.<\/p>\n<p>L&#8217;alimentaci\u00f3 havia de consistir en fruites, llavors, insectes, ous i algunes aus petites, cosa que els assegurava un major consum de prote\u00efnes. Quan l&#8217;aliment escassejava es traslladaven en grup a altres regions m\u00e9s prop\u00edcies. Ocasionalment, podrien trobar cereals o arbres fruiters, carn de petits vertebrats, bulbs, tubercles i arrels. El moment fonamental, dins la hist\u00f2ria de la humanitat, va ser l&#8217;inici de la ind\u00fastria l\u00edtica, amb la talla de la pedra i l&#8217;obtenci\u00f3 de fletxes i d&#8217;altres instruments a base de s\u00edlex. \u00c9s un punt crucial en el proc\u00e9s de la humanitzaci\u00f3, ja que aleshores s&#8217;inicia la primera fase cultural.<\/p>\n<p>Conv\u00e9 precisar que cadascuna de les fases aliment\u00e0ries s&#8217;ha produ\u00eft lentament i en cap moment no hi va haver un canvi brusc d&#8217;una etapa a una altra. L&#8217;adaptaci\u00f3 humana a la nova alimentaci\u00f3 no va ser simult\u00e0nia a totes les \u00e0rees geogr\u00e0fiques, sin\u00f3 que el costum es va anar estenent lentament i progressivament. L&#8217;aportaci\u00f3 de nous aliments no va excloure gens les formes nutritives anteriors.<\/p>\n<p>Les dificultats per assolir el coneixement de l&#8217;alimentaci\u00f3 prehist\u00f2rica s\u00f3n m\u00faltiples. En primer lloc, hi ha les variacions clim\u00e0tiques. \u00c9s sabut que durant el Quaternari se succeeixen cinc grans glaciacions molt fredes, alternant amb quatre llargs per\u00edodes interglacials de clima c\u00e0lid. Aquestes oscil\u00b7lacions clim\u00e0tiques, encara que molt lentes, van ser prou intenses per canviar la geobot\u00e0nica i, en conseq\u00fc\u00e8ncia, la fauna. Alhora, que evolucionava l&#8217;home seguien una altra evoluci\u00f3 paral\u00b7lela moltes plantes i animals. Tot i aix\u00f2, algunes esp\u00e8cies antigues es van extingir. Un altre factor important per al canvi d&#8217;alimentaci\u00f3 van ser les variacions estacionals.<\/p>\n<p>L&#8217;estudi del pol\u00b7len \u00e9s una ci\u00e8ncia relativament recent i ens permet con\u00e8ixer parcialment el paleoambiental prehist\u00f2ric. S&#8217;ha de tenir certa reserva quan es pret\u00e9n establir la situaci\u00f3 geogr\u00e0fica de la pol\u00b7linitzaci\u00f3, ja que hi ha tipus de pol\u00b7len aer\u00f2fil, portat pel vent, mentre que un altre ha estat introdu\u00eft per l&#8217;home. Aquestes troballes sempre tenen valor perqu\u00e8 s\u00f3n indicadors de les plantes ambientals, algunes de les quals van ser comestibles. Respecte als ossos apareguts en estacions prehist\u00f2riques \u00e9s probable que la majoria siguin restes aliment\u00e0ries de l&#8217;home, per\u00f2 hi ha la possibilitat que alguns hagin estat introdu\u00efts a les cavernes per animals carnissers i carronyers com les hienes en els intervals de temps en qu\u00e8 la cova estava deshabitada.<\/p>\n<p>Les darreres excavacions arqueol\u00f2giques, realitzades amb molta m\u00e9s professionalitat, minuciositat i estratificaci\u00f3 han posat de manifest no nom\u00e9s els grans mam\u00edfers que convivien amb l&#8217;home, sin\u00f3 tamb\u00e9 la microfauna formada per cole\u00f2pters, rosegadors, petites aus, cucs, mol\u00b7luscs\u2026 que il\u00b7lustren enormement les variacions clim\u00e0tiques. Els estudis de sedimentologia de les terres que omplen les cavernes han contribu\u00eft igualment al coneixement de les condicions clim\u00e0tiques i ambientals (Paleoclimatologia).<\/p>\n<p>La hist\u00f2ria aliment\u00e0ria de la humanitat \u00e9s un proc\u00e9s dram\u00e0tic de cont\u00ednua adaptaci\u00f3 a les condicions ambientals, geol\u00f2giques i climatol\u00f2giques que condicionen l&#8217;exist\u00e8ncia d&#8217;un tipus determinat d&#8217;aliments, tant d&#8217;origen animal com vegetal. I el proc\u00e9s tant d&#8217;hominitzaci\u00f3 com d&#8217;evoluci\u00f3 antropol\u00f2gica posterior \u00e9s un proc\u00e9s constant d&#8217;interacci\u00f3 entre gens, aliments i estil de vida. L&#8217;estudi d&#8217;aquests fen\u00f2mens ha indu\u00eft a l&#8217;aparici\u00f3 de noves ci\u00e8ncies relacionades amb l&#8217;antiguitat humana com s\u00f3n la Paleogen\u00e8tica, la Paleonutrici\u00f3, la Paleobioqu\u00edmica, la Psicoimmunologia i la Paleopatologia. Eaton afirma que els estudis de gen\u00e8tica moderns permeten suposar que el gruix del genoma hum\u00e0 data d&#8217;un mili\u00f3 d&#8217;anys i que el 99,99% dels gens de l&#8217;Homo sapiens estaven formats abans del desenvolupament de l&#8217;agricultura (10.000 anys). Tenim el mateix genoma que al Paleol\u00edtic, amb una gran difer\u00e8ncia d&#8217;estil de vida. La desadaptaci\u00f3 a aquesta situaci\u00f3 condiciona l&#8217;aparici\u00f3 de les &#8220;malalties de la civilitzaci\u00f3&#8221;, com ara l&#8217;obesitat, la diabetis no insulinodependent, l&#8217;ateroesclerosi, la hipertensi\u00f3, l&#8217;infart agut de miocardi, la pancreatitis, alguns tipus de c\u00e0ncer, com el de c\u00f2lon&#8230;<\/p>\n<p>La hip\u00f2tesi de treball per establir els conceptes de Paleonutrici\u00f3 i l&#8217;origen de la dieta mediterr\u00e0nia es basa en:<\/p>\n<ol>\n<li>Troballes arqueol\u00f2giques de restes de cer\u00e0mica, pedra polida i d&#8217;ossos humans de l&#8217;\u00e0rea Mediterr\u00e0nia i especialment de la prov\u00edncia de Girona.<\/li>\n<li>Les observacions dels pobles abor\u00edgens actuals<\/li>\n<li>T\u00e8cniques anal\u00edtiques aplicades a les restes antropol\u00f2giques: an\u00e0lisi d&#8217;oligoelements, an\u00e0lisi d&#8217;is\u00f2tops estables, desgast oclusal i patr\u00f3 d&#8217;estriaci\u00f3 dentari, que ens permeten con\u00e8ixer si les dietes eren riques en productes animals o productes vegetals.<\/li>\n<li>Els estudis paleopatol\u00f2gics de les restes humanes ens descriuen alteracions cl\u00edniques \u00f2ssies com c\u00e0ries, cribratge orbit\u00e0lia, hiperostosi porosa, deformacions \u00f2ssies.<\/li>\n<\/ol>\n<h3>&#8216;Neolititzaci\u00f3&#8217; de la dieta<\/h3>\n<p>Per a la hip\u00f2tesi neol\u00edtica de l&#8217;origen de la dieta mediterr\u00e0nia es considera que en el proc\u00e9s de neolititzaci\u00f3 es donen les circumst\u00e0ncies adequades perqu\u00e8 pugui establir-se una pauta nutritiva d\u00b4estil mediterrani. El per\u00edode neol\u00edtic s&#8217;inicia probablement pels canvis clim\u00e0tics postglaciaci\u00f3, a causa de la desaparici\u00f3 del poder recol\u00b7lector i ca\u00e7ador de l&#8217;home, ja que van desapar\u00e8ixer plantes i fruits silvestres i els grans mam\u00edfers. No hi ha una implantaci\u00f3 simult\u00e0nia, sin\u00f3 que \u00e9s un proc\u00e9s no sincr\u00f2nic, irregular, gradual, amb possible marxa enrere i amb noves incorporacions d&#8217;aliments, m\u00e8todes i cultures provinents de les noves aportacions poblacionals. Les premisses acceptades serien:<\/p>\n<ol>\n<li>Inici de la cer\u00e0mica, cosa que significa aparici\u00f3 de la cuina, de la sociabilitat i de la comensalitat.<\/li>\n<li>S&#8217;inicia l&#8217;agricultura. A banda es continua amb les t\u00e8cniques de recol\u00b7lecci\u00f3 de fruits; a Orient proper es conreen cereals (blat, ordi), lleguminoses (llenties, cigrons) i olives, pomes i pistatxos. A Egipte es menjaven 44 esp\u00e8cies de plantes, a m\u00e9s d&#8217;arrels, ous i mel.<\/li>\n<li>S&#8217;inicia el pasturatge i les explotacions ramaderes, amb ovelles, cabres i b\u00f2vids.<\/li>\n<li>La pesca de tota mena es consumeix prop del mar i dels llacs. S&#8217;aprofita la llet, la llana, els ous i la mel. A les pintures rupestres neol\u00edtiques es representen figures animals (cabres, c\u00e9rvols, cavalls) i en una cova de Val\u00e8ncia (Cova de l&#8217;Aranya) s&#8217;observa la recol\u00b7lecci\u00f3 de mel.<\/li>\n<li>S&#8217;estableix un ritme circadi\u00e0 de menjar seguint el ritme solar.<\/li>\n<li>En disposar d&#8217;horts es preval la ingesta de productes vegetals.<\/li>\n<li>S&#8217;inicien les galetes de pa o es panifica la farina m\u00f2lta.<\/li>\n<li>S&#8217;inicia el premsatge dels fruits de l&#8217;olivera, amb la conseg\u00fcent obtenci\u00f3 de l&#8217;oli.<\/li>\n<li>Segurament s&#8217;inicia la fermentaci\u00f3 de suc de ra\u00efm.<\/li>\n<\/ol>\n<p>Perqu\u00e8 tot el proc\u00e9s neol\u00edtic (agricultura, domesticaci\u00f3 i sedentaritzaci\u00f3) pugui tenir lloc cal una bioclimatologia moderada i favorable. Tota aquesta revoluci\u00f3 comporta importants canvis personals i socials:<\/p>\n<ol>\n<li>Disposar de menjar tot l&#8217;any; tanmateix, els indicadors paleonutricionals assenyalen que el neol\u00edtic va ser una \u00e8poca de cultura herb\u00edvora i d&#8217;escassetat.<\/li>\n<li>Sedentaritzaci\u00f3.<\/li>\n<li>Distribuci\u00f3 de la feina. La dona s&#8217;ocupa de l&#8217;hort i l&#8217;agricultura, les aus i la fabricaci\u00f3 de la cer\u00e0mica que es fa servir per a magatzem, preparaci\u00f3 i consum d&#8217;aliments. Inici de les receptes de sopa, amb tots els avantatges nutritius que aix\u00f2 representa. D&#8217;altra banda, es creen utensilis per al menjar i gots per a la beguda. Realment les sopes s\u00f3n amb seguretat dorigen neol\u00edtic. L&#8217;home s&#8217;ocupa del pasturatge, la ca\u00e7a i el govern de la fam\u00edlia i eventualment de la tribu.<\/li>\n<li>S&#8217;inicien les creences religioses amb culte al sol i als fen\u00f2mens climatol\u00f2gics (tempestats, raigs) i geol\u00f2gics (volcans i terratr\u00e8mols). Se suposa que es creu a l&#8217;altra vida; es practica el culte de l&#8217;acompanyament amb joies i estris culinaris als morts. Els adorns s\u00f3n molt variats: ossos perforats en V, comptes, petxines biperforades&#8230;<\/li>\n<\/ol>\n<div id=\"attachment_113337\" style=\"width: 330px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-113337\" class=\"wp-image-113337 size-full\" src=\"https:\/\/raed.academy\/wp-content\/uploads\/2022\/02\/August-Corominas.jpg\" alt=\"August Corominas\" width=\"320\" height=\"185\" aria-describedby=\"caption-attachment-113337\" \/><p id=\"caption-attachment-113337\" class=\"wp-caption-text\">Dr. August Corominas<\/p><\/div>\n<p>D&#8217;altra banda, la neolititzaci\u00f3 \u00e9s un proc\u00e9s llarg d&#8217;uns 2.000 anys de durada que s&#8217;expandeix des de l&#8217;\u00c0sia Menor per tota la Mediterr\u00e0nia. Es descriuen dues rutes fonamentals per a l&#8217;expansi\u00f3 del neol\u00edtic a tot Europa: una ruta nord i centreeuropea i una segona ruta seguint les ribes del Mediterrani. Des del punt de vista cronol\u00f2gic, a Egipte s&#8217;iniciaria al voltant del 7.000 aC. C.; a Catalunya comen\u00e7aria al 5.000 a. C. Va ser a Mesopot\u00e0mia on s&#8217;inicia l&#8217;escriptura que ha de permetre la humanitat entrar a la fase intel\u00b7lectual.<\/p>\n<p>Partint de les troballes prehist\u00f2riques a la zona de Girona, amb gran nombre d&#8217;estacions on les capes superiors corresponen a l&#8217;\u00e8poca neol\u00edtica i les inferiors al Paleol\u00edtic es pot suggerir que la dieta Mediterr\u00e0nia en aquesta zona dataria de 5.000 anys a. C. i es pot afirmar que es compleixen les premisses exposades amb anterioritat:<\/p>\n<p>a) Ritme circadi\u00e0 alimentari establert.<br \/>\nb) Un 75% de l&#8217;alimentaci\u00f3 provinent de l&#8217;hortoagricultura plantada o la recollida de flora silvestre.<br \/>\nc) \u00das de cereals parcialment o totalment panificats.<br \/>\nd) Consum d&#8217;oli d&#8217;oliva.<br \/>\ne) Consum de ra\u00efm fermentat (vi) o ordi fermentat (cervesa).<br \/>\nf) \u00c9s necess\u00e0ria una bioclimatologia benigna perqu\u00e8 el proc\u00e9s de neolititzaci\u00f3 es mantingui.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Establir\u00a0l&#8217;origen de la dieta mediterr\u00e0nia t\u00e9 inter\u00e8s hist\u00f2ric, antropol\u00f2gic, cultural, evolutiu, nutricional i m\u00e8dic<\/p>\n","protected":false},"author":12,"featured_media":113332,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"_et_pb_use_builder":"","_et_pb_old_content":"","_et_gb_content_width":"","footnotes":""},"categories":[237,247,242],"tags":[],"class_list":["post-113245","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-alimentacio-i-nutricio","category-antropologia-ca","category-categ-historia","et-has-post-format-content","et_post_format-et-post-format-standard"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.4 -
