El primer lliurament de Reptes Vitals va veure la llum el passat mes d&#8217;abril en format de llibre amb l&#8217;objectiu d&#8217;establir-se com un informe pluridisciplinar anual de refer\u00e8ncia sobre la nova realitat que sorgeix despr\u00e9s de la pand\u00e8mia.<\/p>\n<p>&#8220;Nosaltres ens dediquem a fer feli\u00e7os els altres mitjan\u00e7ant les nostres propostes a la cuina. Per\u00f2 no podem ni hem d&#8217;oblidar mai que la felicitat del planeta passa per cuidar-lo, mimar-lo i no explotar-lo. No ens pertany a nosaltres. Nom\u00e9s som all\u00f2 que custodiem per a la seg\u00fcent generaci\u00f3. Per\u00f2, com \u00e9s a trav\u00e9s de la cuina com expressem les nostres idees, pensaments, sentiments i formes d&#8217;actuar, en aquest breu cap\u00edtol volem fer-los part\u00edcips d&#8217;un dels nostres aut\u00e8ntics reptes vitals, com a cuiners i com a \u00e9ssers humans. Els compartim una proposta culin\u00e0ria que obre el debat de les ombres de la nostra alimentaci\u00f3 i intenta remoure els espais de silenci. El men\u00fa es va denominar <strong>&#8220;La Tierra se agota&#8221;<\/strong> i entre els plats els comensals van poder tastar <strong>&#8220;Agua Clara &amp; Agua sucia&#8221;<\/strong>, un primer entrant per conscienciar sobre el problema global de l&#8217;aigua, o <strong>&#8220;Mares Calientes. Comer Desequilibrio&#8221;<\/strong>, un mar i muntanya vegetal per llan\u00e7ar el missatge de l&#8217;augment de la temperatura dels oceans. A m\u00e9s d&#8217;altres plats amb un clar missatge encaminat a l&#8217;acompliment dels anomenats <strong>Objectius de Desenvolupament Sostenible<\/strong>.<\/p>\n<p>Els tres germans han estat mereixedors del <strong>Premi Nacional de Gastronomia<\/strong> i les principals guies de restauraci\u00f3, aix\u00ed com els cr\u00edtics nacionals i internacionals, han reconegut el treball d&#8217;El Celler de Can Roca durant els seus m\u00e9s de 30 anys d&#8217;exist\u00e8ncia. El 1995 va arribar la primera estrella <strong>Michelin<\/strong>; el 2002, la segona, i el 25 de novembre de 2009, la tercera. El 2009 la revista brit\u00e0nica <strong>&#8220;Restaurant Magazine&#8221;<\/strong> va situar el restaurant dels Roca com el cinqu\u00e8 dels 50 millors del m\u00f3n. El 2010 van pujar fins a la quarta posici\u00f3, i el 2011 i 2012, a la segona. Al 2013 i 2015, a la primera posici\u00f3. A partir del 2019 formen part del quadre d&#8217;honor permanent d&#8217;aquesta classificaci\u00f3.<\/p>\n<p>Despr\u00e9s d&#8217;anunciar al mar\u00e7 l&#8217;obertura de la nova restaurant <strong>Normal<\/strong> a Girona, els Roca tenen entre els seus futurs projectes al bar de tapes <strong>Boca Seca<\/strong> i el restaurant ecol\u00f2gic i de reaprofitament que impulsa el fill de Joan Roca, <strong>Marc Roca<\/strong>. El primer pas d&#8217;aquesta nova aposta dels Roca ser\u00e0 dotar d&#8217;un hort ecol\u00f2gic a l&#8217;espai de celebracions <strong>Mas Marroch<\/strong> per produir les pr\u00f2pies verdures i hortalisses de men\u00fa a la mesura del possible, tot i que sense oblidar els petits productors de proximitat. En aquesta mateixa l\u00ednia, els Roca impulsen costat del <strong>BBVA<\/strong> un projecte de promoci\u00f3 i recuperaci\u00f3 de varietats locals de tot Espanya que el banc envia als seus clients en petites caixes.
